Throw away all the pits. Next, slide the cherries and any juice from them directly from the cutting board into a saucepan. Put the saucepan on medium-low to medium heat. Mash and stir the cherries with a wooden spoon while they cook. Simmer for 20 minutes and taste to check the tartness. If it’s too tart, add some sugar. Turn the heat down to low and continue simmering the cherries while stirring. When they’ve decreased their mass by about two thirds and the back of your wooden spoon is coated, turn off the heat. Leave the cherry concentrate uncovered to cool for 10 minutes. Then, your concentrated tart cherry juice should be ready to use as a dessert topping or stored in a sealed food container.
